This is THE summer recipe that you will make all summer long. The homemade dressing is worth the extra couple minutes, trust me.
First, this recipe calls for homemade mayonnaise, I know what you are thinking but it would not have been the same without it. Plus, I am not a big dressing/mayonnaise person and this is so dang good!
1 lb Ground Beef
1 bunch chopped romaine lettuce
1/2 medium red onion, thinly sliced
1 large tomato, sliced
1 avocado, sliced
Homemade Mayonnaise:
1 egg (has to be room temperature)
1 cup Avocado Oil
- Use an emulsifier or blender to combine. Once combined, mixture will be creamy.
- Add 1/2 tsp mustard powder, 1/2 tsp salt, juice of 1/2 lemon. Mix thouroughly.
This mayonnaise can be used for anything and is now a staple (from a household who never has mayonnaise, we do now!)
Creamy Jalapeno Dressing:
3/4 cup homemade mayonnaise
2 seeded and roughly chopped jalapenos
1/2 cup fresh cilantro
1 to 2 cloves of chopped garlic (to taste)
2 tbsp red wine vinegar
salt and pepper to taste
In a food processor or blender, combine the homemade mayonnaise, cilantro, chopped jalapenos, garlic, vinegar, salt, and pepper. Blend until smooth and set aside.
Pat out hamburgers, season with salt and pepper, and grill to desired doneness.
Assemble salad and enjoy!
