Sunday Morning Quiche
A quick and easy breakfast, brunch, or lunch for Sunday! A great way to use whatever leftover ingredients you may have on hand. 

INGREDIENTS:

1 whole pie crust 

7 whole eggs

2 cups fresh spinach

Bacon - cooked, cooled, and chopped (I used 6 pieces)

~1 1/2 cups heavy cream

2 cups shredded cheese (swiss, cheddar, etc.)

Salt and pepper to taste

***Any other vegetables you would like. This is a great time to use any vegetable in the fridge like mushrooms, broccoli, onion, green peppers, etc.

 

DIRECTIONS:

Preheat oven to 200F.

Roll out pie crust and press into deep dish pan. 

 

In a large bowl, beat eggs with cream, add salt and pepper. Add cheese, spinach, bacon, and any other vegetable you would like. 

Pour into pie crust and press to submerge ingredients. Cover loosely with foil, place on baking sheet and bake at 400 F for approximately 1 hour. Bake for longer if needed until quiche is not overly jiggly (soft) in the middle. 

Remove from oven and let cool slightly.
