Sirloin Steak - trimmed and cubed to bite size pieces.
Bell Peppers chopped
Green Onions - diced
Trim and cube sirloin steak to bite sizes pieces, be sure to trim away any silver skin from steak. Season steak liberally with salt and pepper.
Set aside steak and heat up a cast iron skillet to medium heat.
Add a little oil to pan and place chopped bell peppers in pan. Cook briefly until desired tenderness. Remove from pan.
In hot cast iron, cook steak bites in batches. It is important to not over crowd the pan as this will not allow the steak to brown correctly. Remove each batch from pan and set aside.
After all steak bites have been cooked, add chopped garlic to pan and stir.
Add peppers and steak back to pan, stir and remove pan from stove top. (At this point, you are just mixing ingredients and warming back up the peppers.)
Garnish with green onions.
