Looking for new ways to use up all those tomatoes? Oven roasting them is a quick and efficient way! Enjoy as is after roasting, blend them for sauce, or cool and freeze for later. The possibilities are endless.

INGREDIENTS:
Tomatoes
Oil for roasting (I used avocado oil)
Salt & Pepper
Garlic Cloves
DIRECTIONS:
Line baking dish with aluminum foil.
Place tomatoes and garlic on pan, drizzle with oil.
Season tomatoes with salt and pepper, toss to coat thoroughly.
Add garlic cloves to pan.
Place in oven on broil (High).
Watch tomatoes closely and remove when tomatoes start to turn brown.
To make the best spaghetti sauce:
Once slightly cooled, pour all contents of pan into blender with fresh basil. Blended and served over pasta- so good!
