Banana bread with swirled chocolate? Yes please! A great breakfast treat.
3/4 cup all purpose flour
2 oz. bittersweet chocolate
2 medium very ripe bananas
2/3 cup sugar
1/4 cup oil
3/4 cup whole wheat flour (can use all purpose)
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup buttermilk (don't have buttermilk? You can add either lemon juice or vinegar to regular milk to make butter milk!)
1 tsp vanilla
Preheat oven to 350 F. Spray loaf pan with non stick cooking spray and dust with flour.
Place chocolate in microwave safe dish and melt in microwave on high in 30 second intervals, stirring in between. Set aside to cool.
Place bananas and sugar in bowl, mash until smooth with a few small pieces of banana left.
Add oil and eggs, stir until combined.
Mix in flour, baking soda, baking powder, and salt with spatula or wooden spoon.
Stir in buttermilk and vanilla.
Stir 1 cup of batter into the melted chocolate.
Fill loaf pan with approximately 1/2 the banana batter, then add 1/2 chocolate batter. Repeat until batter is gone. Gently swirl with knife.
Bake for approximately 45 minutes until golden brown and toothpick inserted in the center comes out clean. Cool and enjoy!
