Blueberry Pie Slab Bars

Laura from Lolos Home Kitchen knocked it out of the park with this recipe. A quick summer recipe that is perfect for the busy times when you need an amazing dessert but don't have all the time to prep. This recipe is completely customizable too! You can make everything from scratch, use store bought, or switch up the filling!

 

INGREDIENTS:

Package of premade pie dough (need 2 rolls for a top and bottom)

1 can Oregon Fruit Blueberry Fruit Filling (or choose any other flavor)

1 egg

Glaze

1 cup powdered sugar

1-2 Tablespoons milk

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Spray a sheet pan with non stick spray. Unroll premade pie dough out on top of the prepared sheet pan. It will likely go over edges, but that is okay.

  2. Spoon fruit filling out onto the pie dough. Spread out evenly.

  3. Unroll second premade pie dough out on top of the filling to sandwich it in. Pinch all the edges around to seal in the filling. Cut off excess dough as well.

  4. In a small bowl, whisk the egg and a teaspoon of water together. Brush over entire top of crust.

  5. Take a fork and poke holes over the top of the pie crust to vent. Place in oven and bake for 30 minutes. If juice from fruit oozes out, that is okay.

  6. Remove from oven and let cool. To make the glaze- mix the powdered sugar and milk. If too thick, add more milk a little at a time. Drizzle over top of cooled pie bars. Let harden before slicing.
