Beef Banh Mi Bowl

I am going to be honest, I have eaten this as left overs all week and I am not tired of it yet! This is THE recipe you need to try, trust me, it is a refreshing new way to enjoy ground beef. 

 

INGREDIENTS:

1 lb ground beef
1/2 cup coconut aminos 
2 Tbsp. corn starch
2 Tsp. ginger, grated or powder - add to taste if not using grated.
1 cup cucumber, sliced
1 cup carrots, julienne
2 jalapeños, sliced
2 cups rice, cooked
Cilantro for garnish - if you don't have fresh cilantro, you can add dried to the rice while cooking.

Sriracha Mayonnaise - Combine 1 cup mayonnaise and 3 tablespoons of Sriracha, mix and set aside. (Be sure to taste and adjust to liking)

DIRECTIONS:

Cook ground beef until browned. 

In a small bowl, add coconut aminos, corn starch, and ginger. Whisk until combined.

Once beef is cooked, pour mixture over ground beef and cook until sauce is formed.

Serve over rice with cucumber, jalapenos, and carrots. 

Top with fresh cilantro, sriracha mayonnaise. You can also add a little fresh lime juice for some citrus!
