Ingredients
Cooked crumbled bacon for topping
1 tsp Basil, dried
1 cup chopped carrots
1/2 cup chopped celery
1 tsp Garlic powder
1 tsp Parsley, dried
4 small potatoes chopped (bite sizes pieces)
1 onion
3 cups chicken broth, low-sodium
~ 1/4 cup All-purpose flour
1 salt and D&D Beef Pepper Blend
~ 1/4 cup Butter, unsalted
1 cup sharp cheddar cheese, grated
~ 12-16 oz. package Velveeta cubed (I used 12 oz. and felt it didn't need more)
2 cups Whole milk (or 2%, use what you can!)
Directions
Cook ground beef over medium heat. I suggest cooking in a large pot or dutch oven, this allows you to use one pan. Once browned and crumbled, remove from pan and add a couple tablespoons of butter to pan. Add onion, celery and carrots to pan to cook. When onions start to turn translucent, add a couple more tablespoons butter to vegetables and add flour to pan. Whisk until mixed, then add milk to pan, continue whisking. Add cheese slowly to pan and stir until mixed. Then add chicken broth, diced potatoes, and ground beef. Add seasonings.
Cook on medium-low heat until potatoes are cooked.
Top with crumbled bacon and enjoy!
