Mini Pavlova

Mini Pavlovas are crisp meringue shells with a marshmallow soft inside. We love to pile on fresh berries for this amazing summer time treat. The mix of textures and flavors can't be beat - plus it is extremely easy to make! 

 

Ingredients:

  • 1 cold egg white
  • 1/8 teaspoon cream of tartar
  • 1/4 cup granulated sugar
  • 1 cup mixed berries, washed and cut into bite size pieces

Recipe makes 4 Mini Pavlovas

 

Directions:

Preheat oven 200 F and have a parchment lined baking sheet. Prep all ingredients.

In a medium bowl, add the cold egg white and cream of tartar. Beat with an electric mixer until foamy and soft peaks start to form.

Slowly stream in the granulated sugar while continuing to beat on medium speed. When stiff peaks have formed, stop mixing. At this point, if you would like, you can scrape into a piping bag. If not using a piping bag, utilize two spoons.

Use two spoons to make four circles of meringue on the baking sheet. Use a spoon to make a slight divot in each circle (to hold the fresh fruit later).

Bake for 45 minutes and then turn off the oven, let cool for 1 hour. Do not open the oven during the cooling process. The meringues should not appear sticky to the touch (thought the insides may be).

After cooling meringues, they are ready to serve!
