A one pot meal that will help make weeknights a little easier! This is one of those recipes that I did not really measure but threw together (sorry about that!). It is extremely customizable to what you enjoy and is the perfect meal to enjoy for leftovers.
INGREDIENTS:
1-2 lbs D&D ground beef
Elbow macaroni
28 oz can red enchilada sauce
Shredded cheese
Optional: black beans, green peppers, onion, etc.
DIRECTIONS:
Preheat oven to 250F.
In a large skillet, brown ground beef until cooked.
Add chopped green peppers, onion, drained & rinsed black beans to skillet.
Add elbow macaroni to skillet and stir together.
Pour in enchilada sauce and mix. (add more if needed)
If looks to "dry," add water to skillet and stir. (You want noodles to be submerged
Pour into 9x13 pan. Cover with foil and place in oven to cook for approximately 1 hour.
Check to make sure noodles are cooked, once cooked remove foil and top with shredded cheese. Place back in oven and cook until cheese bubbles.
