Spice up any meal with this Jalapeno Cheddar Cornbread recipe. Pairs great with our brisket, beef plate ribs, or a smoked chuck roast.
INGREDIENTS:
1 Jiffy Corn Muffin Mix
~1/4 cup Cheddar Cheese, shredded
~1/4 cup corn, drained
1-2 jalapenos chopped (amount optional, leave some slices to place on top if desired)
DIRECTIONS:
Mix muffin mix according to package instructions.
Add 1/4 cup of shredded cheddar cheese and corn, mix.
Add desired amount of jalapenos to mixture.
Mix well, add a little extra liquid if needed.
Grease 8x8 inch pan and add mixture.
Place jalapenos on top if desired.
Bake according to package instructions.
