Grilled lettuce, I hesitated the first time I was served it but I now think it's a great (easy) side dish! After a couple of attempts, I have found our favorite recipe.
INGREDIENTS:
Romaine Lettuce, cut in half vertically
Olive or Avocado Oil
1 Lemon
Salt & Pepper
Shredded Parmesan Cheese
DIRECTIONS:
Set your grill to medium high heat.
Brush lettuce with oil and season with salt and pepper on both sides.
Grill for approximately 3 minutes cut side down, flip and sear other side for approximately 2 minutes. **Do not leave your grill! Watch lettuce closely and do not over cook.
Remove from grill and let cool slightly. Squeeze fresh lemon juice over the top as well as parmesan cheese. Salt and pepper to taste.
