This on the go breakfast is the perfect meal to take with you, meal prep for a busy week, or enjoy at home.
INGREDIENTS:
- 12 hard boiled eggs, peeled and chopped
- 2 cups grated cheddar cheese
- 1 cup mayonnaise (I use less)
- 12 slices bacon, cooked and crumbled bite size pieces
- 1 tbsp. Dijon mustard (I use ~1/2)
- 1/2 tsp. garlic powder
- 3 dashes Worcestershire sauce
- 6 whole English muffins split
- Optional - Add some cayenne pepper for a little heat, use pepperjack cheese instead of cheddar, or add some veggies like green pepper/spinach (chopped small)
DIRECTIONS:
Combine eggs will all ingredients, mix gently. Spread on English muffin halves and broil for 3 to 5 minutes until hot and bubbly.
