Egg and Bacon English Muffin Melts - On The Go!

This on the go breakfast is the perfect meal to take with you, meal prep for a busy week, or enjoy at home. 

 

INGREDIENTS:

  • 12 hard boiled eggs, peeled and chopped
  • 2 cups grated cheddar cheese
  • 1 cup mayonnaise (I use less)
  • 12 slices bacon, cooked and crumbled bite size pieces
  • 1 tbsp. Dijon mustard (I use ~1/2)
  • 1/2 tsp. garlic powder
  • 3 dashes Worcestershire sauce
  • 6 whole English muffins split
  • Optional - Add some cayenne pepper for a little heat, use pepperjack cheese instead of cheddar, or add some veggies like green pepper/spinach (chopped small)

 

DIRECTIONS:

Combine eggs will all ingredients, mix gently. Spread on English muffin halves and broil for 3 to 5 minutes until hot and bubbly.
