Berry Dump Cake

A perfect summer time treat that is quick and delicious!

 

INGREDIENTS:

  • cups fresh blueberries
  • cups fresh raspberries
    • I used frozen mixed berries, be sure to partially thaw and drain the liquid.
  • 1/2 cup sugar
  • teaspoon grated lemon peel
  • tablespoons fresh lemon juice
  • 1 box of yellow or white cake mix
  • 3/4 cup butter, melted (Tip! I use a stick of frozen butter and shred it over the entire pan. This ensures the butter covers everything evenly.)

 

DIRECTIONS:

Heat oven to 350°F. Spray 13x9-inch pan with cooking spray

Spread berries evenly in bottom of pan. In small bowl, mix sugar and lemon peel; sprinkle over berries. Drizzle lemon juice over top.

Top berry mixture with dry cake mix.

Pour melted butter over top (or even spread shredded butter over top), covering as much of the top with butter as possible.

Bake 45 to 50 minutes or until top is light golden brown, mostly dry on top and bubbly around edges. Cool before serving.
