Thawing Beef - Our Best Tips and Tricks

While we try to be prepared when it comes to cooking beef - sometimes we just need to thaw a steak fast.

When it comes to thawing beef, the best way is to thaw in the fridge. We always suggest placing your frozen beef on a plate while thawing in case the packaging leaks. The amount of time it takes to thaw in the fridge will vary depending on the weight/thickness of the beef. Most steaks will thaw in the fridge overnight, thicker cuts like roasts, briskets, etc. may take two days or longer to thaw depending on the size. How long can thawed beef be left in the fridge? Once completely thawed, it can be stored in the fridge for 5 days.

When I am in a hurry to thaw beef, my favorite way is to thaw in water. Do not remove the beef from packaging and place in an airtight/leak proof bag (like a Ziploc). Fill a large bowl with cold water and submerge the beef, changing the water every 30 minutes or so. This step is important! The frozen beef will chill the water, when you refill with cool water this will help the beef thaw faster. This method thaws steaks fast - usually less than 1 hour! Thicker cuts like a roast, ground beef, etc. may take 2 to 3 hours. You can thaw multiple steaks in one large bowl, just be sure that all steaks are surrounded by water.

What about thawing beef in the microwave? Honestly, I despise thawing beef in the microwave. You are constantly checking it, it can start to accidentally cook, and I also think it makes the beef taste different. In my opinion, thawing beef in water works just as well and you know that it won't affect the quality of the beef.

Thawing on the countertop - You can thaw beef on the counter top but have to keep an eye on it. The safety concern is if you would forget it and it becomes warm. Thawing in the fridge or cold water is best, in my opinion.
